Lab Series Guatemala Santa Isabel
Tasting Notes: Peach, Honey, Chocolate
Santa Isabel is known for a few things in the Coban region, and one of them is being very demanding about the selective picking methods they use. Because of this intense picking method you would think that they do not have many returning workers. According to Luis II (nickname Wicho) this is not the case. Most of their 500 seasonal workers return year after year to pick for them. This means that Santa Isabel is consistently an amazing cup of coffee year over year.
Due to constant rains in the region the coffee trees flower upwards of nine times a year. This means that up to 10 passes must be done on the coffee trees every harvest season. In 2015 the harvest season lasted from November 15th until the end of March.
